Carrot and Coriander Soup
Ingredients
Carrots, small dice 800g
Onion, small dice 200g
Garlic, cloves, crushed 1
Turmeric 1tsp
Fresh ginger, peeled and sliced 1cm
Fresh coriander 1tbsp
finely chopped or Dried coriander 1tsp
Double cream (Optional) 1tbsp
Water 1lt
Oil 1tbsp
Pepper Pinch
Method (6 portions)
1. Heat the oil in a large saucepan on a medium heat. Add the carrot, onion, garlic and ginger. Stir. Cook until onion is soft but not coloured.
2. Add the turmeric and pepper, stir well then add the water. Turn heat to low and simmer till carrots are tender. Blend.
3. Coriander - add dried coriander with the turmeric. Then add fresh coriander after blending. Stir through.
4. Stir through the cream and serve
Chefs Tips
1. If the soup is too thick, add a little more water.
